National Pancake Day > Leap Day

National Pancake Day, which was today, just might be my new favorite holiday.  All I’m saying is that Leap Day has a lot to live up to tomorrow.

Breakfast of champions.

I’m not much of a cook, but I do make a mean bagel egg sandwich and pancake.  I mean I guess if I have to choose a meal to excel at cooking breakfast is a pretty solid choice.  Anyway, after my pancakes, I was jazzed for a day at the office.  I do go to work sometimes, in between all the skiing and playing on trampolines.

Finally conquered the peanut butter M&M dispenser.

I like to credit the pancake breakfast for inspiring me to finally come up with a system to beat the peanut butter M&M dispenser that taunts me all day long in my office.  It worked.  I had no peanut butter M&Ms all day!

Undoubtedly, the highlight of my National Pancake Day holiday was picking up my friend Cayce from the airport.  Cayce has been in China since June, and he is back in Denver for at least the next couple months.  I really couldn’t be happier about this.  After I spent my summer going to good-bye parties, it was so nice to finally have a friend return to Denver.  Perhaps a National Pancake Day miracle?

This is my boy!

Not only is Cayce my boy but he’s also one of my favorite ski partners.  Naturally my life is ridiculous as always, and I’m taking Thursday off to go skiing.  36 hours back in the United States and Cayce already wants to go skiing.  This is why we are friends.

Attention friends, you can only leave me for foreign countries on the condition that you bring me back cool jewelry.

Typical Colorado girl that can't make up her mind. Trail running, hiking, climbing, camping, CrossFit, ultimate frisbee, and skiing? E, all of the above.

  1. ok. now i am hungry. lifesaver mints are not doing it for me.

  2. haha! you & i have this whole “professional breakfast makers” thing in common! glad you had a great leap day!

  3. how can you resist the pb m&ms??? i admire your willpower. peanut and pb m&ms could be the death of me if left out in large gumball machines.
